Creamy, Dreamy Sorbet Sandwiches for Hot Summer Nights

For a warm-weather treat, the pastry chef Marc Aumont is now making macaron sorbet sandwiches at the sweets shop next door to Gabriel Kreuther’s restaurant. Cheesecake sorbet is a name that doesn’t quite do justice to the delectable frozen confection at the center of these crisp, feather-light cookie sandwiches. A subtle tang from the Philadelphia cream cheese used in the sorbet comes through in the plain version, but less so with the berry or pistachio.
